Which cheese should be used for making pasta sauce? Also what is pesto ?

I used to use cheddar cheese in india to make pasta sauce. I am not sure if it is available here and if yes what it is called in portugese. can we use any other cheese to make cheese sauce for pasta. Also I could see lot of variety of pesto in the shop. what are they and how can we use them.
