Does anyone watch Gilmore Girls? I'm confused about something?

If Rory and Lorelai moved to Stars Hollow when Rory was a baby and in the series Rory was between the ages of like 16 and 20 then how come Luke and Lorelai were talking about them meeting 8 years before????
