Chocolate fountain at wedding reception...?

My fiance and I love chocolate so we thought this would be a good idea. We plan on having it running for approximately 2-3 hours. When should we start? Before dinner so guests can munch while we are doing pictures? After dinner? During dance? Also, what items are good for dipping that can sit out for this long?
